50ml El Recuerdo Mezcal
25ml fresh lime juice
25ml mint simple syrup (see ingredients below)
Mint Simple Syrup with Panela
1 cup BONRAW Panela
1 cup water
1 cup of fresh mint leaves
Make the simple syrup by adding the ingredients to a pan and bringing to the boil. Once it’s boiling, turn the heat down, give it a good stir and simmer for 5 mins. Take off the heat and leave for 15 mins to infuse. Strain and chill.
To a cocktail sha ker add the Mezcal, lime juice, mint simple syrup and ice. Shake well until its well combined and chilled.
Serve in a highball glass with plenty of ice and mint leaves.
