Punnet of cherry tomatoes
Generous bunch of basil
Ciabatta - torn into cube-ish pieces.
1 garlic clove crushed but whole
A little olive oil
For the dressing:
1 tbsp BONRAW Organic Panela
2 tbsp Olive Oil
2 tbsp Balsamic vinegar
1 clove of garlic crushed but whole
A good pinch of salt
In a mixing jar, pour olive oil, balsamic vinegar, panela, salt and whole garlic clove. Put on the lid and shake aggressively and leave to one side.
In a frying pan, add the garlic clove and a little olive oil and then the ciabatta. Gently fry for 5 mins making sure they are nice and crispy. Take off the heat and put to one side.
Chop the tomatoes in half, roughly tear the basil and place in a bowl. Add the ciabatta croutons and then drizzle over the dressing before giving it a good mix.
